The georgian peach 2 slices peeled peach • fresh mint • 1 oz ginger syrup • 1 1/2 oz proof whisky • 1/4 oz Cinzano (optional) • ice

Add peaches, mint and ginger simple syrup to a glass. Muddle. Add proof whisky, Cinzano and lots of ice. Stir. Top with ginger ale and garnish with a grilled peach slices.



ginger simple syrup 1 cup sugar • 1 cup water • 1 piece (about 10 inches long and 4 ounces; or use several small pieces) fresh ginger, peeled and cut into very thin rounds
Bring the sugar and water to a boil in a medium saucepan over medium-high heat, stirring to dissolve sugar. Add ginger; bring to a simmer. Remove from heat, and let steep 30 minutes. Pour syrup through a fine sieve into an airtight container; discard ginger. Refrigerate up to 1 month.



The sweetness of fresh Ontario peaches goes perfectly with a bit of smoky flavour. Here are a couple of ways to grill peaches on the BBQ.

Grilled peach salsa 4 ripe local peaches • 1 tbsp olive oil • kosher salt • 1 tbsp lemon juice • 1 small red onion • fresh mint
Brush pitted and peeled peach halves with some olive oil, and sprinkle a bit of salt all over. Grill over medium for about 2 minutes per side. Let cool, and then slice, and mix with a good squeeze of lemon juice, a bit of finely chopped red onion, a bit of chopped fresh mint, and salt to taste. This is beautiful with grilled pork, and will add a lot of life to an everyday grilled chicken breast.


Grilled peaches with ice cream 4 ripe local peaches • 2 tbsp melted butter • 4 tbsp brown sugar • salt
Coat the peaches in melted butter, and sprinkle on a generous coating of brown sugar, with a pinch of salt. Grill over medium for about 3-4 minutes per side, and serve warm, with a squeeze of fresh lemon, with a good quality vanilla ice cream. (for even more decadence, drizzle with dulce de leche)

Not only will you venture deep inside Blue Mountain’s labyrinth of caves and crevices, at Collingwood’s Scenic Caves, you will have the option of riding a zip line through the trees, crossing Ontario's longest suspension footbridge, hiking through the lush trails or playing an 18-hole game of miniputt. After visiting the Scenic Caves, take a short drive back to the Blue Mountain village for dinner and to check out its many outdoor activities. Blue Mountain is no longer just a skier’s haven. With its mountain coaster, high ropes, golf, hiking adventures and many more summer activities, you will be set for hours of outdoor fun.

proof rum, cranberry capitol Vol. 98

the cranberry kee 2 oz proof rum • 4 oz iced-tea • 2 oz cranberry juice • ¼ tsp fresh lemon juice
Pour all ingredients into an ice-filled glass. Garnish with lemon and fresh cranberries. For a lighter version, use white cranberry juice.


iced-tea 4 teabags (black or green tea) • 8 cups of water (filtered water will give a far better taste) • 1 cup sugar
Boil half of the water (4 cups) and pour over tea bags. Allow the tea to steep for no more than 5 minutes, otherwise it may become bitter. In a large jug or bowl, place 1 cup of sugar and 4 cups of cold (filtered) water. Stir until the sugar is dissolved.
Pour your brewed tea into the sugar/water mixture and stir. Adding the hot tea to the cold water helps prevent the finished drink from becoming cloudy. Cool.

 


At the core of Muskoka, located about 160 km north of Toronto, is the town of Bala, a picturesque spot that several hundred people call home throughout the year, though this number can quadruple in the summer months.


We stopped in town for some lunch. There are a few quaint restaurants and shops in the centre of town, like Saturday Afternoons and Skirt. (www.saturdayafternoons.ca) If you do visit, make sure to explore the town on foot – otherwise you will miss the great areas by the river.

Though most people head to Bala in the summertime to enjoy the lake, autumn is also a great season to visit, as the annual Cranberry Festival takes place on the weekend after the Canadian Thanksgiving. The festival features plenty of vendors, live entertainment and performances to keep everyone in the family busy.



“If you build it, they will come.” Long before the fictional movie Field of Dreams – where a farmer upon hearing a voice speaking to him, creates a baseball diamond in the middle of a field of corn – Gerry Patrick Dunn felt the same real-life urge to push ahead in 1941 with an idea so grandiose it left some people scratching their heads in amazement. Gerry erected the most ambitious summer dance pavilion ever built in Ontario cottage country: Dunn’s Pavilion – “Where All Muskoka Dances”  Over 70 years later, The Kee to Bala is still attracting top knotch talent and a big crowd.
