The Uncle Junior
1 1/2 oz. proof whisky
1 oz. Campari
1 oz. sweet vermouth
Fill a mixing glass halfway with ice.  Add the proof whisky, vermouth and Campari. Stir vigorously for 30 seconds. Strain into a chilled cocktail glass and ba-da-bing – garnish with a lemon peel twist.

In honour of Tony and these great wines, we are hosting an Italian dinner party. Our talented culinary friend has created this delicious red sauce, made with proof whisky, just for us to enjoy.

proof pasta paisano sauce
¼ cup olive oil
½ cup chopped onions
3 garlic cloves, chopped
¼ cup red or yellow peppers, chopped
½ cup chopped green olives
1 tbsp dried oregano flakes
1 tsp red crushed chili peppers
½ c. proof whisky
1 bottle (600mL) strained tomatoes
1 tsp salt
In a medium sauce pan pour 1/4 cup of olive oil, heat at medium high. Add 1/2 cup of chopped onions, 3 chopped garlic cloves, 1/4 cup of chopped red or yellow peppers, 1/2 cup chopped green olives and a tablespoon of dried oregano flakes. Stir and cook at medium high for 5 minutes. Sprinkle a teaspoon of Red Crushed Chili peppers. Reduce heat to medium for 3 minutes. Add 1/2 cup-125 ml of proof whisky and cook at medium low for another 3 minutes. Add 1 bottle, approx 600 ml of strained tomato's (every grocery store has these in the sauce section in bottles, used for many sauce bases) Add 1 teaspoon of salt. Cook at medium high for 10 minutes then reduce to low for about 20 minutes. Stir occasionally to prevent the sauce from sticking to the bottom of the pan.


Relax and add 1 1/2 ounces of proof whisky to a tumbler glass with a splash of Italian bitters and a splash of lime – Italian Punch! Put on your white Italian muscle shirt and wait for the proof to come in on the best Pasta sauce...it will all be in the taste when the sauce is ready. Cook your favourite pasta* and enjoy! Prep time - 5 minutes. Total cooking time 35 to 40 minutes, the longer the better. Arrivederci, David Bevilacqua
